Cookie Recipe

Today I did something I haven’t done for quite a while: I baked my favorite cookies. My husband’s favorite is Oatmeal…a recipe he got from the school cooks years ago.  Now mine I found in a magazine approximately 25 years ago (give or take a year or two).  I mentioned on Facebook that I was baking Trailside Oatmeal Treats…one of my nieces asked ‘what’s the recipe?’. So decided I’d put it onto here.

1-3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or margarine, softened
1/2 cup chunk-style peanut butter
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1/4 cup milk
1 teaspoon vanilla
2-1/2 cups uncooked oats
1/2 cup each semisweet chocolate pieces and raisins (I use 1 cup chocolate chips and leave out the raisins)

You can use a mixer or just mix by hand.

Stir together flour, soda and salt; set aside. In large bowl beat butter, peanut butter and sugars
until creamy. Beat in eggs, milk and vanilla. Stir in flour mixture, then oats, chocolate pieces and
raisins. Drop by rounded tablespoonfuls 3 inches apart on ungreased baking sheets. Bake in
preheated 350 degree oven about 15 minutes or until lightly browned. Remove to rack to cool.
Makes 42.   I usually end up with about 4 dozen cookies.

I use the 1 cup chocolate chips because I don’t really care for raisins.  I have made them with the raisins and must admit, in spite of not liking raisins, they are quite good.
